I’ve been trying to make sure that I take my nutritionist’s advice and get in at least one serving of cruciferous vegetables a day. Cruciferous vegetables detox your body and offer all sorts of healing benefits. I came up with a detox salad that’s quick, easy and tastes great!
With the myriad of ailments I have, standing (or sitting) and chopping vegetables takes a lot out of me. Anytime I find a shortcut, I take it! I came across a bag of Cauliflower Hash at Kroger last week. It’s a 16 ounce mix of chopped cauliflower, broccoli stalk, carrots and onions. I choose organic foods as often as possible, but since most of the vegetables in the hash are on the Clean 15 list, I went with it.
You will need:
- a bag of cauliflower hash (or one cup each of chopped cauliflower and broccoli, 1/4 c chopped onions and 1/2 c chopped carrots)
- 1/4 c chopped celery
- 1 c chopped cabbage (can use green or red cabbage)
- 1 1/2 c fresh chopped parsley
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1/4 c apple cider vinegar
- 1 tbsp fresh grated ginger
- 1/4 c chopped almonds
- 1/4 c sunflower seeds
- your choice of natural no sugar sweeteners. I use one tsp Trim Healthy Mama’s Sweet Blend. (mix of natural stevia and erithrytol) but you can use a tsp of honey (pictured)
- salt & pepper to taste
Mix the hash (or chopped vegetables) with the celery, cabbage, parsley, almonds and sunflower seeds in a large bowl or other container. I try to only use glass or stainless steel. Next combine the olive oil, lemon juice, apple cider vinegar, grated ginger and your sweetener of choice and mix well. I spun mine in my Nutri Ninja on High for about 30 seconds, just to make sure all those flavors meld together. Pour the dressing over the salad mixture, cover and refrigerate for a few hours for best flavor. This makes a great side dish or you can just have it by itself as a refreshing salad. I made and store my salad in a Pyrex 11 cup container. I love these containers because they are heavy duty glass and stack well in the fridge. Let me know how you enjoy the salad!
